{healthy} chocolate muffins

oh yes I did say healthy and chocolate
and it gets better
sugar free
with vegetables
and amazingly delicious

:: Chocolate muffins ::

1 C dates
1 C coconut oil
2/3 C raw honey
4 large or 5 smaller eggs
2 tsp vanilla
2 tsp cinnamon
2 tsp salt
1 tsp baking soda
1 tsp baking powder
4 C shredded zucchini & carrots
2/3 C cocoa powder
3 C spelt or wheat flour
1/2 - 1 C cranberries
1/2  - 1 C nuts
1/2 C dark chocolate chips :: optional
1-2 Tbsp reserved date soaking water if needed
{depends on how moist your zucchini is}

soak dates in boiling water for 5 minutes
 drain water and save for later
add coconut oil to dates and puree into a paste
add in each ingredient
if it seems a bit too dry add in the date water 1 Tbsp at a time

bake at 350 for 25 minutes
I enjoy them plain
but for a treat we sometimes top them with raw honey peanut butter icing

:: Raw Carmel Dip ::

:: Raw Carmel Dip ::
1 C. dates {soaked in boiling water}
1 C. cashews {soaked 30min}
1/2 C. maple syrup
1 tsp vanilla
dash of sea salt

cover dates with boiling water and let sit for 5-10 minutes to soften
drain & save date water
drain cashews
puree dates with maple syrup
add in cashews, vanilla & salt
puree and add in saved date water until desired consistency
I usually use most of my water

I hope you enjoy
and i'd love to hear what you think if you give it a try.

:: ice cream love ::

oh do we love ice cream
and with being sugar & mostly dairy free
...it's either make it or forget it

and this pregnant mama has been craving ice cream
so it was time to make it

:: ingredients ::
2 cans full fat coconut milk
1/3-1/2 C raw honey
2 tsp. vanilla

{optional flavors}
raspberry :: 1 bag frozen raspberries, zest & juice from one lemon
peanut butter :: 1/3 C peanut butter
lemon :: zest & juice from 4 lemons
kale :: 1 bunch kale plus additional 2 tsp. vanilla
mint chocolate chip :: 2 tsp. peppermint extract, 1/4 C chopped dark chocolate {added at the very end}

blend it all together
put it in your ice cream maker
wait 30 minutes
and enjoy
or you can put it in the freezer for an hour or so to harden more
when you get it out of the freezer if it is too hard just let it sit for 15-30 minutes

:: granola bites ::

or gorilla bites
...as my kids named them

2/3 C. almonds
2/3 C. peanuts
2/3 C. raw oats
1/3 C. raw honey
2 tsp. vanilla
1/2 tsp. real salt
1/2 tsp. cinnamon
1/3 C. chopped cranberries {optional}
1/3 C. dark chocolate {optional}

toast the nuts in the oven until lightly browned
chop oats and nuts in a food processer
mix everything together until thoroughly combined
if you are adding the chocolate, it will melt from the warm nuts
...which to me makes them all that much better
especially when you are only adding 1/3 C. it makes the chocolate spread further. {grin}

add coconut oil to your hands
take a scoop into your palm and roll into a ball
let them cool for 20 minutes {if you can} and then enjoy!

:: Kale Chips ::

What's for snack ::
{Kale Chips}

with an abundance of kale in our garden
and my current love for salty things
these kale chips have been one of our favorite go-to snacks in the afternoon
and they are so easy
see...

:: harvest, wash & dry a large bunch of kale ::
:: tear the stem from the center and rip the rest into bite size pieces ::

:: toss the kale with coconut oil until evenly covered, add salt to taste ::
:: spread evenly on a baking sheet ::

{try not to be too jealous of my postage stamp kitchen and dirty white floor .grin.}

:: Bake at 200 for 10-20 minutes, depending on size and how crunchy you like them
...they are done before they look like it ::

:: Let cool for 5 minutes, if you can wait, and then dig in ::

and if your family is anything like mine
it will be a hit!

:: Hearty Black Bean Soup ::

{Oooops, I tried to schedule this for next week but published on the wrong date... today! So I figured if all of my reader followers saw it already I should just let you all have it now. Enjoy!}

we're a soup kinda family
one pot meal
easy to get a balanced meal
I can make it up as I go along
can start it anytime of day
double it and freeze for another meal
still tastes good served at room temp on a hot day
and I could go on and on....

:: Hearty Black Bean Soup ::

1 bag of dried black beans
{soaked overnight and cooked}
...or 4 cans black beans
1/2-3/4 cup pearled barley or quinoa
1/2 each yellow, orange & red bell pepper diced
4-5 carrots sliced
2 cobs sweet corn
2 shredded zucchini
1 can diced tomatoes
1 jar of salsa
1 tsp cumin
1 heaping Tbsp coconut oil
2 Tbsp raw apple cider vinegar
salt to taste

Enjoy!

:: Raw Kale Salad ::

My garden needs weeded desperately
...but it's 100 degrees today
and there is no way this pregnant lady is going to weed the garden,
or do anything outside today.
At least I can still find the kale. {grin}

I was hot even in the house,
so I decided to clean out the freezer....
which was easy because it's mostly empty.
All I have left from last years harvest is
swiss chard, green beans & beets.

I did find some more zucchini,
which has me thrilled because I have been craving zucchini muffins
...but I won't buy them from the store when they are so close to ready in the garden.
Not to mention the closest organic zucchinis are probably 7 hours away.

I also found the raw truffles that we made this week
and I stuck in the back of the freezer to hide. Ha!
Treats like this are what weans me from my sugar addiction.
Which I am giving up again.
I was sugar free for 5 months and then I slipped. sigh.
Little by little I let sugar slip in,
and once you start it's so hard to stop.
At least for me.

Now onto the Raw Kale Salad....

::Raw Kale Salad::

large handful of fresh kale
handful of toasted walnuts

::Cashew sauce::
1/2 C cashews
3 T sunflower seeds
1 C water
3 T coconut oil
3-4 cloves garlic
1 t real salt
2 T lemon juice
3 T nutritional yeast {optional}

...wash and cut the kale into a bowl
...toast walnuts alone in a skillet until fragrant
...add all of the sauce ingredients into a blender and blend until smooth
...toss together and enjoy!

since we have an abundance of kale in the garden,
I have been trying to come up with more ways to use kale.
And then I remembered my best friend telling me about the kale chips she made last year.
I had already put them on my "to make" list,
but since I didn't have kale in the garden last year I never got around to it
...until I remembered yesterday.
oh yum! I'll share very soon...
we ate them all so fast I didn't even have a chance to think about taking a picture.

Happy Sunday Friends!

:: Sweet Potato Spinach Quiche ::

a few of you had asked for this recipe
 when I mentioned it on facebook a while back
...i figured it was about time. .grin.

:: Sweet Potato Spinach Quiche ::

coconut oil {for oiling the pan}
2-3 sliced sweet potatoes
2-3 handfuls of cut spinach
1 cup of halved grape tomatoes
1/2 cup feta cheese {or any other cheese you'd like}
1 cup coconut milk {or milk of your choice}
12-16 eggs {depending on how think you want it}
salt & pepper to taste

.oil the bottom of a 9x13 baking dish.
.lay sliced sweet potatoes on the bottom.
.mix all other ingredients.
.pour over sweet potatoes.
.bake on 400 for 30-45 minutes.
::i stick a fork in to make sure the sweet potatoes are done::

...this feeds my family of 8 with little to no leftovers
you could easily cut the recipe in half for a smaller portion...

and I must apologize to anyone who likes exact recipes
...I do not. {grin}
I make up most of our meals and I tend to just go with it.
but the good news :: you can't really mess this one up

Hope you enjoy!

What's for snack?

We had sprouted chickpeas

and peppers & olives
for a snack

and it was delicious!

want to know more about sprouting?
check out this previous post
and if you have questions
ask away! {grin}

What's for Breakfast

We had a Dutch Baby.

Since we've gone grain free...
almost completely.

And that means oatmeal, granola, egg sandwiches & pancakes
are not making their appearances at our breakfast table
quite as often.

It also means we're trying lots of new recipes
like this one!

...and it was delicious!

{Recipe}

Place your cast iron skillet in the oven
turn the oven on 500
heat for 15 minutes

1 cup coconut milk
2 eggs
2 tsp. vanilla extract
2 tsp cinnamon
1 dropper full of liquid Stevia

mix
then add in

1 cup almond meal
1/4 cup coconut flour
1/4 tsp baking soda
1/4 tsp baking powder

mix well.

Take cast iron skillet from hot oven {carefully!}
put a large spoonful of coconut oil in skillet
let melt
pour batter into skillet
bake at 500 for 12 minutes

While it's baking you can make your topping...
I sauteed 4 apples in coconut oil and cinnamon until soft.

...this served our family of 8 one slice each...

I altered the ingredients in this recipe
you can find the original here

The best un-cheese sauce

instead of cow milk
we drink hemp, coconut, almond or rice milk
instead of cow ice cream
we enjoy coconut ice cream {most of the time}
instead of  regular cow cheese
we use raw cheese or this delicious un-cheese sauce

this sauce is incredibly versatile
and if you try it
chances are you'll love it!

1/2 cup cashews
1/4 cup sunflower seeds
1 cup water
1 t. real salt
2-6 cloves garlic
1 lemon, juiced
1 heaping T. coconut oil

toss it all into a blender or food processor
or use a stick mixer like me
and blend until smooth

I use this sauce
...to make mac&cheese {with or without veggies}
...as stuffed shell filling {by doubling, adding chopped swiss chard or spinach,
1 shredded zucchini & 3 eggs}
...for lasagna filling {same as above}
...with cooked quinoa, kale & veggie {kind of like pasta salad}
...mixed with potatoes and cauliflower {like cheesy potato casserole}
...with chopped veggies and mashed beans to make veggie patties

Like I said, versatile
...pretty much anything you would add a cheese sauce too,
you can use this!

Hope you enjoy!

homemade {yum} granola

I am not a cereal fan at all
...but I love granola

and so does the rest of my family
...which makes store bought granola expensive
not to mention it's not that stellar!

That's why we make our own!

you'll need 3 cups of nuts and seeds
{I used 1 cup of each... almonds, walnuts & pumpkin seeds}
in separate bowls, cover them with water and soak overnight

use raw, organic, unseasoned whenever possible

8 cups of thick rolled organic oats
covered in water & 1 T. apple cider vinegar and soaked overnight

you'll also need 1 1/2-2 cups of pitted dates
{we love medjool dates, but any date, fig or raisin would work}
cover with 1 1/2 water and soak overnight

in the morning your oats will have absorbed most of the water and look puffy
...drain off the excess liquid and place in a large mixing bowl

your nuts will be plump and vibrant
...drain off excess liquid and chop if desired

I finely chopped the almonds and walnuts {don't over chop these or they will puree}

do not drain the liquid from your soaked dates
...add in 5 T. cinnamon
1 T. dried ginger
1/2 t. ground nutmeg
1/2 t. ground cardamom
1 T. vanilla extract
1/2 t. real salt

blend until it's a smooth paste

add all of your chopped nuts and date paste together
...and MIX

and when your arm is tired
pass the bowl and let someone else mix {grin}

when it's all mixed spread it out in a thin 1/4 in. thick layer
I use my awesome Excalibur dehydrator
dehydrate at 115 or below for 10-24 hours depending on humidity in your climate

{you could also use your oven on it's lowest heat setting... above 118 the heat will break down the enzymes and it will no longer be a "living" food}

once it's dried...
remove it from the sheets and break it up into pieces
and store in a air tight container.

Now you can add in dried fruits like cranberries, goji berries, mango or cherries
{if possible try to use organic, unsulfured and unsweetened dried fruit}

This makes about a gallon ziplock bag full or approx 4-5 store bought boxes of granola

Enjoy!
