I wondered how long it would take before I randomly hit a 'photoshoot'.
1 year old Ozzie... oh how I love my little Z! He was a book boy then and he still is... he LOVES to read!

on another quick note... does anyone have a good curried lentil recipe. I've tried 2 but haven't loved them. They were both too bland. BUT 4 of your fabulous recipes that you shared back HERE are now on our favorites menu. Thanks mamas! And I am going to share our weekly menu and grocerry list soon... you know you're excited about that! {grin}

  2. Oh and since you are going to be doing a recipe/food post soon is there any way you could share your split pea soup recipe. You have mentioned it in the past and I would love a good recipe for it. My mom used to make it but of course never wrote it down. Thanks!!!

  4. I went to Bangladesh when I was in college. While there, one of the Bengali ladies gave me her recipe for Dhal (Lentil curry). I've put it on my food blog. You can find the recipe here: http://everydaymealstoshare.blogspot.com/2009/03/dhal-lentil-puree.html

    I think it tastes great and it's as authentic as they come! Let me know what you think if you try it.

    I'm curious as to what 4 recipes you really liked from the crock-pot post. Would you be willing to share?

  6. Red Curried Lentils

    1 cup red lentils, rinsed and drained.
    2 cups vegetable stock
    1/2 tsp ground turmeric
    3 1/3 tbsp olive oil
    1 onion, chopped
    2 cloves garlic, finely chopped
    1 large green chili, seeded and finely chopped
    2 tsp ground cumin
    2 tsp ground coriander
    2 tomatoes, chopped
    1/2 cup coconut milk

    1. Place the lentils, stock, and turmeric in a large heavy-based pan. Bring to the boil, reduce heat and simmer, covered, for 10 minutes or until just tender. Stir occasionally and check the mixture is not catching on the bottom of the pan.

    2. Meanwhile, heat the oil in a small frying pan and add the onion. Cook until soft and golden and add the garlic, chili, cumin, and coriander. Cook, stirring, for 2-3 minutes until fragrant. Stir the onions and spices into the lentil mixture and then add the tomato. Simmer over very low heat for 5 minutes, stirring frequently.

    3. Season to taste with salt and pepper, and stir in the coconut milk until heated through. I served it with basmati rice which was outstanding.

    My easiest and favorite curied lentil recipe (but I'm going to have to try Anon's!)

    Curried Lentils

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 cup dried lentils
    2 Cups vegetable stock
    1 1/2 Cups Canned Cream of Coconut
    2 Tablespoons Curry Paste
    Salt -- to taste

    Rinse lentils and place in a saucepan with the water. Bring to a boil, then cover, and simmer over low heat for 15 minutes. Stir in the curry paste, coconut cream and season with salt to taste. Return to a simmer, and cook for an additional 10 to 15 minutes, until tender.

    I just ran through all your past pictures before bed quick, and WOW your girls are just so darn cute. And so IDENTICAL. I wouldn't even come close to explaining who was who.

  17. Curried lentil soup

    Ingredients (serves 4)
    • 1 tablespoon olive oil
    • 1 brown onion, chopped
    • 2 tablespoons korma curry paste
    • 2 cups dried split red lentils, rinsed, drained
    • 6 cups vegetable or chicken stock
    • 1 cup light coconut milk
    • 1/3 cup coriander leaves, chopped
    • warmed naan bread, to serve
    Method
    1. Heat oil in a large saucepan over medium heat. Add onion and cook for 5 minutes. Add curry paste and cook, stirring, for 1 minute.
    2. Add lentils and stock. Cover and bring to the boil. Reduce heat to medium-low and simmer, partially covered, for 20 minutes or until lentils are very soft (stir often to prevent lentils from catching). Remove scum from surface (see card, p81). Remove from heat and cool slightly, stirring to release heat.
    3. Using a food processor or blender, puree soup, in 2 batches, until smooth. Return to saucepan over low heat. Add coconut milk. Heat, stirring, for 4 minutes or until hot (do not boil). Ladle soup into bowls. Sprinkle with coriander and serve with naan bread.
    Notes & tips
    • Korma is a mild curry paste made from tomato, coconut, almonds and spices. Look for it in your supermarket spice aisle.
    This is one of our family favourites. I will make it with a bit less liquid and serve with rice and pappadums.

  20. Sweet, sweet boy. Both of my children are book lovers and it is a lifelong love - they will never lose it. My little guy just started reading and it is so exciting to see him with his nose in a book all the time! It paid off, all those nights of reading to him. (He still loves to be read to though - that never goes away!)
