EVERYBODY SAY YEAH.... CHICKPEA CURRY!

The BEST Chickpea Curry you'll ever have... I know it may not look that good to some of you but it is... trust me... oh trust me it's good!



2 cans organic chickpeas (garbonzo beans)
1 organic white onion diced
1 Tbsp. grapeseed oil
2 cans of organic diced tomatoes
1/2 tsp. tumeric
1/2 tsp. cardamom
1/2 tsp. coriander
1/2 tsp. cumin
1/2 tsp. ground ginger
squirt of lemon juice

..super easy directions..

saute the onion and grapeseed oil
add rinsed and drained chickpeas
add diced tomatoes
add spices
bring to boil... lower heat and cover
simmer for 20-30 minutes

serve over brown rice or our personal favorite bulgar... if you have a favorite grain try it. It's awesome over anything really!

  2. I am going to have the try that! I have a similar recipe that my family loves, and it includes bell peppers, carrots, and TONS of spinach or kale (I generally triple the amount the recipe calls for), and a can of coconut milk. But mine takes 3 hours in the crockpot. I like this quick version!

  7. Thanks soooo much! I love trying new things...and we love chick peas! Oddly enough I have almost everything to make it, including bulgar to put it on! A tiny trip to the store tomorrow and I'm set to jet! Thanks again...ya know...cause I'd like to think that you posted this recipe just for lil' 'ol me!!!!

  9. I tried this and my husband and kids did not like it. I, thought it was good, but not excellent. I was really looking forward to it also. Maybe it is because I don't like curry..........don't know.

  13. YUM! I think I'm making this for dinner tonight. My hubby has had to work late a lot recently, so I am on my own to make dinner for myself and the hooligans. This should be easy enough to make with a baby in the sling and two others pulling on my legs.

  16. Just had to tell you I made this last night and it was BIG hit with my family! I had to make a few modifications since I didn't want to go to the store so here it is:
    I had one BIG can of whole tomatoes, so I threw those in the blender and pulsed them a bit and diced another few tomatoes to add to it. I also used garam masala (thinking it was cumin) and omitted the coriander as I didn't have any. It was FANTASTIC. After we'd all eaten some, I added in some light coconut milk to see how I like that. It was amazing.
