Lentil tacos...

YUMMY!



I know...
lentils in a taco... weird!
Oh but it's SOOOOO good!

::Saute::
1 C. Onion
3 stalks chopped celery
3 cloves garlic

::Stir in::
1 C. lentils
1 T + 1 t chili powder {use more if you like it spicy}
2 t cumin
1 t oregano
::mix and cook 1 minute::

::Add::
2 1/2 C. water or broth
3 T raisins
::bring to boil, cover, simmer 20 minutes::

::remove lid, cook additional 10 minutes::

::stir in salsa or 1 can of diced tomatoes::

::Serve on life grain tortillas and top with lettuce, tomato, onion, avocado::

like I said YUMMY!

  1. I love all of your recipes! I copy them down and pass them on to my vegetarian neighbor but have tried your veggie enchiladas and they where delicious!

    Not like you take requests or anything or have time on your hands but I would love to see more of your recipes(I've already gotten all the ones you've posted).

  2. Oh my gosh...you are like a prayer answered for me this morning! Okay, that's a bit dramatic I guess, but I did sit down at the computer as I'm trying to plan for week's menu for shopping and these sound great! I just added them to the menu and can't wait to try them. THANKS for sharing!

    Veggie enchiladas...ooh, I missed those! Maybe I'll do a search. ;)

  5. Anytiem I bring a meal to someone(after a baby, or hospiatl stay etc) I ALWAYS bring your pasta dish you posted a while back. It is one of my favorites. I need to get a few things but will try this sometime soon.

  7. I have been making these lentil tacos for so so long! This used to be one of my weekly staple dinners.

    I haven't actually thought about making them for quite some time, so THANKS for the memory refresher! I think my little boy would LOVE. THEM.

  11. That looks very good to me! I think you should have an all recipe blog! I am planning on trying to go off dairy after the first of the year because I believe it has contributed to severe excema. I am going to miss my beloved cheese and ice cream so! I will be in need of flavorful new recipes I can try to get my whole family to eat- where do you get all your recipes?

  13. This sounds so yummy! I make a great lentil rice casserole that we serve on taco shells...so I don't think lentils on tacos sounds weird. :-) It's healthy and tastes so good!
