1/2 cup cashews
1/4 cup sunflower seeds
1 cup water
1 t. real salt
2-6 cloves garlic
1 lemon, juiced
1 heaping T. coconut oil
toss it all into a blender or food processor
or use a stick mixer like me
and blend until smooth
I use this sauce
...to make mac&cheese {with or without veggies}
...as stuffed shell filling {by doubling, adding chopped swiss chard or spinach,
1 shredded zucchini & 3 eggs}
...for lasagna filling {same as above}
...with cooked quinoa, kale & veggie {kind of like pasta salad}
...mixed with potatoes and cauliflower {like cheesy potato casserole}
...with chopped veggies and mashed beans to make veggie patties
Like I said, versatile
...pretty much anything you would add a cheese sauce too,
you can use this!

I don't know how you come up with these recipes, but I would be willing to eat it! Of course, my dear hubby wouldn't. It's took me 30 yrs for him to eat turnip greens. His choices are usually broccoli, green beans or pinto beans.

I make something similar, but I add nutritional yeast and tahini. It is so good!
ReplyDeleteHmmm....I'm not sure about this but then again, I didn't think we would like black bean burgers and my whole family ended up LOVING them! I may have to try this just out of sheer curiosity. Thanks for sharing....I love trying new recipes! =)
ReplyDeleteNo cashews for us, either! You two who said you are allergic, you can try soaked, blanched almonds instead...also very fatty, similar texture...and if blanched (skins removed) they will be cream colored like the cashews
ReplyDeleteYum yum...I've tried almonds before. Its important to soak them first...to release the phytic acid and make them softer.
