So after my 2 week anti cooking break. I’m back…. We’ll I better be after spending $350 at the grocery store. Which is what we normally spend between 2 stores (can’t get everything at the same store). So here is this week’s list!
Saturday – Black bean & salsa soup with corn cornbread
Sunday – Veggie pizzas & fruit salad
Monday – Campfire mush (our very odd name for potatoes, broccoli, cauliflower, carrots, zucchini and a few other veggies all thrown together with some grape-seed oil, garlic, onion & chili powder and then…. Ketchup) with fruit salad
Tuesday – Minestrone soup with fruit salad
Wednesday – veggie lasagna with fruit
Thursday – Salmon sandwiches, sweet potato fries & veggies
Friday – go back to the store J
If you’re dying to know a recipe for one of these just let me know and I’ll post it. J It’s not the most creative week…. I’m starting back slow so I don’t try to quit again. Ha! I do this every few months… it just gets old sometimes. I’m sure you know what I mean!
So glad you're back in the kitchen. Can you make some extras for us!?!? The veggie lasagne sounds especially nice. I make some (Okay, yes, I DO cook sometimes) with spinach, cottage cheese, whole wheat lasagne noodles, spaghetti sauce, parmesan and mushrooms. Yum.

ReplyDeleteThings prob. would run a little more smoothly over here if I had a weely menu. But I just can't stick to it! I do mainly spur of the moment dinners...sometimes, a lot of the time, with Philips help. Since he doesn't mind cooking. : )

There may not be a recipe, but I am intrigued by your sweet potato fries. Do you season them a special way? I have been wanting to make some of these...

ReplyDeleteHow do you do your salmon sandwiches? We love our sweet potato fries so that would be fun to serve them together. I do lots of soups but I've been so tired since my surgeries in Dec/Jan that I haven't had the energy to whip many up. I love your recipes you add on your blog!
